Yeah, I would try updating the Goggles by phone first, which should also get the Avata updated. Then go into DJI Assistant 2 and update the FPV Controller.
I have an M2 Macbook, but DJI Asssistant 2 seems to work just fine on it. Have used it to update my FPV Controller 2 and O3 Air Unit. It doesn't seem to recognize my Goggles 2, but I honestly can't remember if that was something I was able to do on my PC or not.
Tried this yesterday and can confirm that, with the FPV Controller 2, the gimbal functions like a traditional camera drone gimbal in Normal Mode. At least for me, the Motion Controller gimbal slider does not, however.
A PC and a controller (with USB interface) is really all you need. Velocidrone seems pretty light on the PC requirements, but the "arenas" are also pretty limited. My favorite is TrypFPV (available through Steam), but it requires a pretty beefy PC to play smoothly. I'm using my DJI FPV...
I don't think there's any way to do it in flight with either the Motion Controller or the FPV Controller, but have you tried to do it with head tracking?
