I don't think there is a Dshot 125, but Dshot is a digital protocol for communicating between the FC and ESCs. The higher the number, the higher the speed they can communicate. You need DShot600 or better to equal the multishot analog protocol.

Interestingly with the addition of BQRC (Kalman filters) to Betaflight, a lot of guys are having to go back to Multishot as CPI load is just to high with DShot if you're running 32k/32k
I haven't tried dshot but once and it is needy IMO. Multishot rocks. Dshot is digital and the signal of the future, just a little early yet. Dshot is digital while all the previous signal protocols are analog
You should take advantage of DShot if you can. Besides the fact that you don't have to calibrate your ESCs but more importantly, it has 2048 steps of resolution compared to 1000 or less for OneShot so throttle is just so much smoother. And DShot is much more resistant to electrical noise.
i run dshot600 on all three 2", 3" & 5" cerberus quads. i think it especially helped noticeably on the 2". smoother/ quieter with the added rpm i could hear a difference between single, double and dshot. the added bunifit is no need to calibrate.
