How to flip/roll/etc?

Do I need to be in M to do any of these? Just curious if i'm just bad or if i'm missing something

Actually I'd love to just pivot around a central point (which is easy horizontally obv, but moving vertically like an arch or what not)

Yeah , to do flip/roll , you need to enable M mode , and also turn off attitude limit.

also what's Attitude limit? Did you mean Altitude or?

No, attitude. By default even with M enabled it won't let you tilt the aircraft more than about 45° so you can't flip accidentally (and thus not intentionally either). Gotta disable that limit too.
